Blueberry Baked Oatmeal
It took me awhile to hop on the oatmeal train, but I think I finally found a way to eat it every now and then, while actually enjoying it. Baked oatmeal is extremely simple to execute and extremely versatile. I choose blueberries as it is a pretty popular in many dishes like this, but also it is a superfood!
Blueberries provide wonderful antioxidant, vitamin C and health heart support. All of this to say that you can enjoy what some might consider a sweeter breakfast but with a little bit of health benefits. When it comes down to it this entire meal can be whipped up in a blender, and baked all in about 40ish minutes.
crunchy on top and creamy in the middle!
Ingredients:
1 cup rolled oats
2 tablespoons almond flour
1.5 tsp. baking powder
1 tablespoon cinnamon
1.5 tsp. vanilla extract
1 egg
*As many blueberries as your heart desires!
I added a little maple syrup and some extra blueberries on top!
Directions:
Preheat oven to 350 degrees.
Take all ingredients except the blueberries and add them to a blender. Blend until well coombined. Pour mixture into an oven safe bowl that is greased slightly. (I use the olive oil spray) Pour and fold in blueberries.
Bake ton 350 degrees for 35-40 minutes. Add more blueberries and a little milk if desired.
