Cucumber Boats

These might resemble a more advanced version of ant’s on a log…. maybe! Cucumber boats are something that are extremely versatile, quick and easy to make for lunch or even a snack. When I was in college I would make this semi frequently in between classes and even take it with me on the go. The good thing about this recipe is if you do take it on the go somewhere, it can’t really get “soggy”.

For this recipe you need a few simple ingredients, and like I said your add in’s can be versatile and preference. I used chicken when developing this, but I have also tried it with tuna and salmon and it is just as good! Most importantly you will need a binder, most commonly used it mayo when creating a “salad” mix as this. But I have also seen people omit the hummus inside and use that as a binder.

Let’s get into the recipe!

Directions:

  • Slice each cucumber down the middle into halves. Scrape out the inside of each. Take a paper towel and tape the halves dry after you scrape the inside out.

  • Spread 1 tablespoon of hummus in each of the 4 slices. Add more hummus if you like.

  • Open and drain protein of choice and add to a bowl. Combine mayonnaise, salt and pepper. Mix well and begin to portion into each “boat”.

  • Sprinkle EBTB seasoning onto each as much or little as you want, and enjoy!

Ingredients:

  • 2 American Style Cucumbers

  • 1 - 2 cans of chicken, tuna or salmon

  • 1/4 cup of hummus

  • 1/4 - 1/3 cup mayonnaise

    (depends on if you get 1 or 2 cans)

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • everything but the bagel seasoning
