Peach Cobbler

YUMMMMMMMMM...


Ingredients:

  • 5 pealed and chopped peaches

  • 1/4 cup pure maple syrup

  • 1.5 cups AP flour (I use King Arthur)

  • 3/4 cup brown sugar

  • 2 teaspoons baking powder

  • 1 teaspoon cinnamon

  • 1/2 teaspoon vanilla extract

  • 1/2 cup milk or buttermilk (I always use an alternative milk or buttermilk)

This is something that I like to eat specifically in the summer to utilise my peaches more efficiently. I always get so excited during the summer and over spend on peaches… but when you can utilise them in different ways it is fresh and amazing. This way you are also eating seasonally which is what is recommended most importantly!

One thing about a cobbler is that it is versatile. You can do as much or as little crumble as you like, and when you are using ripe peaches you don’t always have to add as much sweetener, they are naturally sweet!

Directions:

  • In a bowl mix together peeled and chopped peaches and maple syrup.

  • In another bowl mix together flour, brown sugar, baking powder, cinnamon, vanilla extract and milk or buttermilk.

  • You can begin mixing with a spatula and then use your hands if needed for cobbler topping.

  • In a pie dish or a 9x13 pan add the topping onto peach mix and spread around.

  • Preheat oven to 350 degrees and bake for 30-40 minutes. Until golden brown.
