Strawberry Pie

Fruit pies are something that I personally CRAVE. For a majority of extended family gatherings I always knew there would be some sort of fruit pie and it was the highlight of any other food there for me. I think this may be because I am not, and have never been a huge fan of chocolate things, so anytime I can get a dessert that isn’t a huge sweet chocolate bomb i’m satisfied.

Although we must remember that some of the best things take time, this recipe can take hours to set for the best outcome or overnight. If you are making this for a party I suggest a day in advance.

Strawberry pie specially can be something that is completely no bake, or you just bake the crust. I have seen several people do this with graham cracker crust, I wanted the challenge of making my own pie dough. For this recipe also I made a gluten free pie crust, and I did omit the refined sugar in my strawberries. You can easily add in the sugar, instead of honey like I did.

I LOVE adding homemade whip cream to any dessert I can. 


Ingredients:

Dough —
  • 2 cups GF all purpose flour

  • 1/2 cup cold cubed butter

  • 1/2 cup ice cold water

  • pinch of salt

Filling —
  • 1.5 - 2 cups fresh cut strawberries

  • 2 tablespoons honey

  • 1 teaspoon vanilla

  • 1 tablespoon cornstarch

  • 3 tablespoon water

For homemade whip cream:

- Take your favourite heavy whipping cream and put it into a stan mixture, use a hand mixer or a whisk until peaks of whip cream form. 

Directions:

  • Starting in a bowl combine flour, cubed butter, salt and start working together with your hands. Begin to incorporate the butter and flour together to make it “grainy” almost. Once you start incorporating some of the butter begin adding a little water at a time.

  • You want to add water and kneed until the mixture forms a dough. Do not let it get to sticky by adding to much water. Once a dough is formed, wrap it up and let sit in fridge for at least 30 minutes.

  • While the dough is chilling, put in a low simmering pot on the stove, strawberries, honey, vanilla and 2 tablespoons of water. Let simmer for about 5 minutes.

  • Create a cornstarch slurry with the cornstarch and remaining 1 tablespoon of water. Add into strawberry mixture. Simmer for another 5-8 minutes. Let the mixture chill in the fridge for 35 minutes at least.

  • Take the dough out of the fridge and roll it out. Put it into a pie dish. (You can make a design if you wish or just lay it flat and trim the extra off). Bake for 25-30 minutes on 350 degrees.

  • Let the dough chill in the fridge for about 10 minutes. After the dough is chilled a little bit add in the strawberry mix.

  • Let set for up for up to 5 hours, or overnight.
